Cloves have a warm, rich flavour with a strong aroma of camphor and pepper. Their warm, wintery flavour makes them very suitable for spicy hot drinks such as mulled wine, Turkish coffee and winter tea.
Cloves have a long tradition in the cuisines of China, Greece, India, Russia and Scandinavia. They are used in spice mixtures all over the world: in Indian garam masala, Chinese five-spice powder, Dutch cookie spices and the French Quatre Epices. In North African cuisine, cloves enhance the flavour of rice and meat dishes. In Asia, cloves are popular in curries.
Spicy cloves in dishes
Add some cloves to stews, roast pork, boiled stock and sauces. Added to the water of steamed vegetables, cloves give a warm peppery flavour.
The taste of cloves is an excellent addition to apples, carrots, onions, oranges, red cabbage, sweet potatoes and pumpkin.
Cloves are often used in sweet dishes in combination with cinnamon, ginger, mace and nutmeg. In savoury dishes, cloves are delicious in combination with sage, pepper, allspice, bay leaf, cardamom, chilli, coriander and fennel.

In dishes
A clove is equivalent to 1/4 teaspoon of ground cloves.
Cloves have a very intense taste and smell. So use only a small amount so that the clove flavour does not overpower your dish.
In and around the house
A nice decoration, which gives off a delicious smell, is an orange with a number of cloves stuck in it.
A lemon with a few cloves keeps mosquitoes, wasps and flies at a distance.
